The roots of the Tenuta del Pajaru estate are deeply embedded in the history and symbols of Puglia. The age-old olive trees known in dialect as “Auru te Ulie” are found everywhere in the region, sculpting a distinctive landscape and witnesses to perseverance and dedication to the fruits of the earth that have always been the cornerstones of grassroots culture in this lovely part of Italy.
The Nero di Troia “Auru” is the expression of the peasant culture of the region, with its intense ruby red, a full nose where it is dominated by ripe plum while in the mouth it moves on tertiary hints of chocolate and cocoa powder. It goes perfectly with aged cheeses, cold cuts and meat dishes.- winery
